How does 2-3 multisig like unchained work?

I have been reading this description of a multi sig vault like unchained, but not fully grokking how it works or how to evaluate it as an alternative to my regular cold card key storage.

My use cases are:
– Reduce security risks if someone finds my hidden seed plates
– Enable estate for my kids in 20 years in the case I die
– Provide a way for my wife in case she does need help and I am not here
It seems the 2-3 multisig secures it while providing some kind of backup but I have also read this can increase the risks of loss because of complexity
Do services like unchained help and if so how?
